Executive Pastry Chef (Mexico)Our client, one of the most luxurious resorts in Mexico requires a top-notch Executive Pastry Chef who will be responsible and oversee the preparation of high-quality pastry, desserts and bakery items for its fine dining restaurants and bars and catering. He / she will play a crucial role in maintaining the five star standards of the resort. He / she must establish consistency and creativity in all of the production of desserts, pastries, chocolates and viennoiserie and breads. Spanish speaker mandatory.Key Responsibilities : Menu creation and developmentProduction of all pastry items including cakes and tarts, chocolate,bread and specialty dessertsLead, train and mentor the team(pastry chefs,bakers and kitchen assistantsMaintain high quality standards in clenliness, safety and sanitation (HACCP certification)Manage inventory, track waste and collaborate with thge purchasing department and maintain budget controlWork closely with Front-of-house team and ensure guest satisfactionPartner with all departments including banqueting and catering events QualificationsProven track record of working in fine dining environmentsStrong knowledge of modern and creative pastry techniques, classic baking and plating designExcellent leadership and team management skillsHigh attention to detail and maintin quality under pressureAbility to multi-taskExperience in budget management, inventory control and cost analysisA culinary degree or relevant certification from an accredited institutionStrong communication skillsCommittment to quality and customer service Excellent Compensation based on experience along with several seasonal bonuses besides annual bonus of 20%.
